Grilled vegetable and chickpeas bowl

Ingredients
- 30 ml (2 tbsp) balsamic vinegar
- 540ml Adonis chickpeas, rinsed and drained
- 3 carrots cut into sticks
- 1 small cauliflower cut into bouquets
- 200g Feta cheese crumbled
- 1 red onion, minced
- 30 ml (2 tbsp.) Olive oil
- 500ml (2 cups) arugula (optional)
Preparation
- Preheat oven to 205 degrees C. (400F).
- In a bowl, combine the balsamic vinegar with chickpeas, carrots, cauliflower, onion and olive oil. Season with salt and freshly ground pepper.
- On a baking sheet lined with parchment paper, spread the chickpea mixture. Bake for 25 to 30 minutes, stirring halfway through cooking.
- If desired, divide the arugula between plates. Garnish with the chickpea mixture and sprinkle with feta.
